Churchkhela is a string of walnuts that is dipped into a thickened fruit juice, and then hung to dry until the fruit juice cures into a rich and chewy coating. Traditional to the country of Georgia, Churchkhela was first made over 3000 years ago.

Fruit Sujuk is a fruit snack loaded with chopped walnuts traditional to Turkey and surrounding countries. The fruits used in Fruit Sujuk are those commonly found in the Mediterranean region.

Chella Bites are the product of Chella’s “Zero-Waste” initiative. Using the excess ingredients from cooking Churchkhela, we have created a modern twist on the traditional Georgian snack. While it comes in a different form, its ingredients and tastes remain the same.

Churchkhela by Chella™ is an All Natural Fruit & Nut Snack that originated about 3000-years-ago. It is a string of walnuts dipped into a boiled fruit juice thickened with a touch of flour and then hung to dry. The fruit juice mixture slowly cools down and drips off creating Churchkhela’s unique icicle shape and chewy fruit coating

What is Churchkhela?

Our Churchkhela is made from ONLY 3 simple ingredients: 100% natural fruit juice, fresh walnuts, and a touch of flour.

What Is Churchkhela Made From?

The main ingredient in our Churchkhela is 100% natural fruit juice, which is the primary source and determinant of the flavor of the final product. The core of Churchkhela consists of fresh walnuts giving it a rich flavour with a crunchy texture. The various fruit flavors will have their own sweetness and sourness profiles.

For the walnuts to be coated with fruit juice, they must first be hand threaded onto a string. That string of walnuts is then dipped into the fruit juice. After dipping, the churchkhela is hung by the string so the fruit juice can dry enough to turn into the fresh chewy outer coating.

The presence of the string in our churchkhela serves as proof of the authentic Georgian method that we use to craft this traditional snack.

The string is also used to cut the churchkhela into pieces without a knife or cutting board.

How Is Churchkhela Made?

Churchkhela is a snack that can be eaten anytime! Here are some of our favorite use cases:

  • Sliced up on a charcuterie/cheese board as a sweet and nutty addition
  • Taken as a nutrient and calorie-dense snack on a hike
  • As a convenient meal replacement during your lunch break
  • As a portable and complete breakfast on busy mornings

Churchkhela originated 3000 years ago in the region that is now the country of Georgia. Georgia has been a winemaking country since the Bronze Age, where each autumn brought a rich harvest of grapes, various fruits, and nuts. Churchkhela was invented as a way to preserve the surplus grape and nut harvest for consumption during the harsh Georgian winter.

Due to its high nutrient density and naturally long shelf, churchkhela was used as a way of sustaining energy and fueling endurance among warriors and travelers in the Caucasus region.

In modern times, churchkhela is the most popular sweet snack in the Caucasus region. Unfortunately, due to its popularity and demand, most of the churchkhela you will find today is not prepared using the traditional Georgian method.

Store in a dry, ventilated place, at a temperature not exceeding 22°C/71.6°F, like in your pantry!

In these conditions, Churchkhela is good for up to 6 months. However, fresh Churchkhela always tastes better. If stored for a long period, a white coating may appear, don't be alarmed! This is the natural sugar coming to the surface as it dries. This is how Churchkhela stays fresh for so long without any added preservatives (natural sugar from fruit juice acts as a preservative).

Fruit Sujuk

Chella’s Fruit Sujuk is handmade in Vancouver British Columbia with an authentic recipe using ONLY 4 ingredients: 100% natural fruit juice, freshly chopped walnuts bits, and a sprinkle of flour + sugar.

Our Fruit Sujuk is primarily made out of 100% natural fruit juice, which is responsible for the intense fruit flavour. Walnut bits are mixed into the chewy fruit juice rolls, which add a crunchy texture and contrast the sweetness of the fruit juice with their nutty flavour.

What does Fruit Sujuk Taste Like?

Fruit Sujuk is a snack that can be eaten at anytime! Here are some of our favourite use cases:

  • A sweet treat to serve along with tea or coffee
  • An energy-inducing snack while hiking, or as a delicious treat to enjoy once your hike is complete
  • Sliced up into oatmeal or yogurt to add flavour and nutrition to your breakfast
  • A tasty treat to share as a gift during holidays

Fruit Sujuk originated in the 17th century in the Ottoman empire. It was originally made as an exclusive delicacy for the Ottoman royalty. The snack quickly became widespread throughout the empire, being sold as a popular delicacy at all bazaars.

Fruit Sujuk was historically made with natural fruit juices as the primary ingredient of the product. However, the invention of molasses has unfortunately replaced the natural fruit juice in most modernly produced Fruit Sujuk as molasses may be cheaper and more easily acquired. Artificial colors are also added to give the appearance of real fruit. 

Rest assured, our Fruit Sujuk recipe is fully natural using no molasses, artificial colors or preservatives.

Store in a dry, ventilated place, at a temperature not exceeding 22°C/71.6°F, like in your pantry!

In these conditions, Fruit Sujuk is good for up to 6 months. However, fresher Fruit Sujuk will have a softer texture. If stored for a longer period of time, the Fruit Sujuk may become very firm and chewy, but don’t worry, the product will still be good to eat!
